How do I edit the supplier list in Dragon eg when a supplier changes address. Thanks

If a supplier informs you of a change of contact details you can simply load the Supplier from the Contacts menu and overtype the address and contact details. All documents will be updated with the new information.

If you have the Postcode Data subscription you can also correct the post code then click the 'book' icon beside it to lookup the address.
